The embroidary on those is called tatreez! It’s a style of Palestinian embroidary that is both very difficult and very distinctive. You can tell based on repeated motifs what specific town or city the pattern comes from (although I don’t know near enough to identify that for these. I guarantee my grandma would know, though.)
